Private pods pages
When I create a pods page, is that page visible to search engines? I want to create a page named something like: djeystvcxjuiw/private_list, with some assurance that the existence of the page would be secret from the rest of the web.

As long as you do not create a WP Page with the same name with "djeystvcxjuiw", and you never create the link that point to "djeystvcxjuiw/private_list" and never display that link in your site, then that page will not visible to search engines. You need to create a test Pods page to make sure about it.
However, besides that way above, I also recommend you to protect the Pods page by adding the security check. For example, if the user_level is admin, then show the content of the Pods page, otherwise, hide that Pods page.
